Chocolate Eclairs

Chocolate Eclairs

  • 1 stick of butter
  • 1 Cup water
  • 1 Cup flour
  • 3 eggs
  • whipping cream
  • chocolate icing (recipe below)

Combine butter and water in a saucepan. Bring to a rolling boil. Remove from heat and quickly add the flour. Beat with a wooden spoon until mixture leaves the sides of the saucepan. Allow to cool for 5 minutes. Add eggs one at a time. beating well after each addition, until mixture is glossy. Pipe mixture using a zip lock with a hole cut into it to desired size. Pipe onto greased trays and bake at 400 degrees for 30 minutes or until eclairs are puffy and golden, then lower the heat to 275 degrees and continue baking for about 15 minutes, until dry. Cool completely. Using a sharp knife, cut slits into the sides of each eclair. Fill with whipped cream and ice tops with chocolate icing.

Perfectly Chocolate frosting

  • 1 stick butter
  • 2/3 Cups cocoa
  • 3 Cups powdered sugar
  • 1/3 Cups mild
  • 1 tsp vanilla essence
Melt butter. Stir in cocoa. Alternately add powdered sugar and mild, beating on medium speed to spreading consistency. Add more milk, if needed. Stir in vanilla.
